Description
This wine is a testament to Dimitar’s dual education, one of wine, and one of mathematics. Working only with Mavrud, an indigenous varietal to Bulgaria, the vinification of the wine resembles that of an amarone, which gives a wildly different experience in comparison to his ‘Santimenti’ Mavrud. Intervention is kept to a minimum, with his goal being to allow the grapes to speak for themselves and give you the most authentic and honest experience possible. That even carries through in his philosophy in how this wine came to be, not for commercial benefit, but purely for Dimitar’s love of the process. Its ripe red fruit, strawberry, plum, a slight spice, these all let you see a bit of what there is to love in Bulgarian natural wine. We recommend having this alongside something as honest as Dimitar, a simple ćevapi.
