Clairin La Rocher is produced at the Le Rocher distillery, located in Pignon in northern Haiti. It is made from sugar cane syrup, a mixture of three varieties grown locally. Fermented in open wooden vats, using wild yeast, with the addition of residues from the previous distillation. Distillation takes place in a wood-fired alembic.
